Preheat the oven to 400°F (200°C).

Prepare a shallow-edge baking pan.

Take the puff pastry dough out of the refrigerator and soften it in room temperature.

Peel and dice the apples into small cubes.

In a small pot, combine the apples, cinnamon, sugar, and butter and stir and cook over medium heat for 10 minutes.

Remove the pot from the stove, add the cornstarch, and stir until the starch absorbs the liquid around the apples then add raisins, walnuts, and hazelnuts.

Roll out a piece of pastry into a 10-inch circle. Cut the edges to form a perfect circle if needed. Brush the edges with beaten egg yolk.

Place the dough in the baking pan, spoon the apple mixture into the center of the circle, leaving space around the edges.

Roll out the second piece of pastry into a rectangle, cut it into strips, and place them in a lattice pattern over the apple filling.

Press the edges gently to seal and brush the entire pastry with a little more beaten egg yolk. Use a fork to create a light decoration around the edges.

Bake the pie in the oven for 40 minutes or until golden brown. Remove from the oven and let it cool slightly.
