- 4 tablespoons olive oil
- 4 tablespoons lemon juice

- 2 large cucumbers (seedless)

- 1 large peeled onion, sliced into rings
- 1/4 cup walnuts
- 1/2 cup small red and yellow tomatoes
- 1/4 cup toasted almonds
- 1/4 cup mixed white cheese balls or feta cheese

Cut the broccoli florets, separating them from the stems, and then divide them into small florets.

Steam the broccoli florets in salted boiling water for about 3 minutes. Remove them and place them in ice water to maintain their green color, then drain.

In a deep bowl, mix olive oil with lemon juice and chopped parsley then season the mixture with salt and pepper.

Slice the cucumber into rounds and shape them into small balls using a special spoon.

Place the broccoli, onions, carrots, and cucumber in the dressing, stirring until they absorb the flavor.
